In 1795 one Jacob Beam sold his very first barrels of corn whiskey. His great-great nephews Steve and Paul Beam launched Limestone Branch Distillers, Inc. in October 2010, and coming from a long line of distillers going back seven generations, the distillery is a true family affair with a pedigree. Located in Lebanon, Kentucky, the location was chosen by the brothers for being just a stones throw away from the now-long-gone distilleries of the familys past. This setting, in addition to the local grain and limestone water, is crucial to the unique and personal recipes of limestone distillery products. While the distillery started with bourbon, namely the Yellowstone Select, Yellowstone Limited Edition, and Minor Case, they have since branched out. Bowling and Burch Gin is the most recent addition to their lineup and a new chapter in their rich family history. This small-batch spirit is Steve Beams passion project, meaning he grows several of the 17 botanicals that the recipe calls for himself, right on the property. The result is a 96 proof gin with a rich profile infused with the atypical honeysuckle and lemon verbena, among others. At the time, Breuckelen was still part of New Netherland, a Dutch colony. In the early 1860s, the State of California was suffering from an epidemic of stray dogs. At the time, dogs were said to outnumber people in the city of Los Angeles by nearly two to one. In San Francisco, however, two stray dogs named Bummer and Lazarus were beloved by the city, and recognized for their unique bond. Bummer, a Newfoundland, made a living by begging for scraps along Montgomery Street. In 1861, he rescued Lazarus from a fight with a larger dog and thereafter, the two dogs became inseparable. Eventually, newspapers and magazines such as the Californian, Daily Alta California, Daily Morning Call and Daily Evening Bulletin began writing stories of the dogs exploits.When Lazarus was captured by a dog catcher in 1862, a mob of angry citizens demanded his release and petitioned the city to have the pair declared public property. City supervisors were soon forced to release Lazarus, and declared thereafter that the duo would be exempt from city ordinances against stray dogs. In 1863, Lazarus passed away after being struck in the head by a horse. Emperor Norton, who had proclaimed himself the Emperor of the United States, attended Lazarus funeral. Two years later, Bummer passed away, and was eulogized by Mark Twain."We named our gin Bummer and Lazarus in homage to those two dogs and everything they did for San Francisco," says Carter Raff, the founder of Raff Distillerie. His distillery, situated on Treasure Island, was formerly used as a Navy brig (the distillation equipment can be found in the yard, while the prison cells have been converted into a bottling area).Bummer and Lazarus Gin is made from 100 percent California grapes, which are distilled into a brandy. "Were looking to produce a unique gin for the market," says Raff, noting that the use of a grape brandy for the backbone of the gin adds a subtle mouthfeel to its flavor. Chief Gowanus Gin is named after the legendary Gowanus, the great chief of the Canarsees in the days of Dutch Brooklyn. Citadelle Gin is a Modern Take on an old Genivre.Alexandre Gabriel of Maison Ferrand is the mastermind behind the revival of this genivre. The original recipe for Citadelle Gin was developed by a distillery in Dunkirk in 1771. In 1775, under the authorization of Louis XVI, two Frenchmen, Carpeau and Stival opened a distillery at the Citadelle of Dunkirk. This complex classic recipe is distilled in cognac pot stills at the Ferrand distillery, and barrel aged, in order to create a more traditional Gin reminiscent of those crafted hundreds of years ago. "Barrel aging tends to tame the flower and citrus feel of gin and enhances its rounder and softer notes, explains Gabriel. Barrel aging was customary since the spirit was stored and transported in oak barrels at a time when glass was too fragile while plastic and stainless steel vessels were still not available. London gin is redistilled in a traditional still with juniper berries and botanicals. Only natural flavorings are allowed to be added and a high quality ethyl alcohol used. London gin must contain at least 70 percent alcohol. Citadelle Gin is technically a London gin, with a few different steps. The 19 botanicals are infused for 72 hours, imbuing the Citadelle body with its aromatic notes. For 12 hours, Citadelle is distilled in a copper pot still with a naked flame. Citadelle is also a pure gin, meaning there is no sugar added.On the nose Citadelle has a delicate and fragrant aromas of fresh flowers, jasmine, honeysuckle and cinnamon. In the 1650s, a Dutch doctor named Franciscus Sylvius was searching for a remedy to the kidney and stomach ailments that he often encountered in his practice of internal medicine. At the time, Dr. Sylvius was a Professor of Medicine in Leyden, and he attempted to infuse juniper berries into a spirit distilled from grain in order to create a panacea. The resulting elixir eventually became known as gin, and was so popular that within a few decades, the Dutch were exporting 10 million gallons annually.
