In 1795 one Jacob Beam sold his very first barrels of corn whiskey. His great-great nephews Steve and Paul Beam launched Limestone Branch Distillers, Inc. in October 2010, and coming from a long line of distillers going back seven generations, the distillery is a true family affair with a pedigree. Located in Lebanon, Kentucky, the location was chosen by the brothers for being just a stones throw away from the now-long-gone distilleries of the familys past. In 1646, under the auspices of the Dutch West India Company, the village of Breuckelen became the first municipality in what would eventually became the state of New York. At the time, Breuckelen was still part of New Netherland, a Dutch colony. In the early 1860s, the State of California was suffering from an epidemic of stray dogs. At the time, dogs were said to outnumber people in the city of Los Angeles by nearly two to one. In San Francisco, however, two stray dogs named Bummer and Lazarus were beloved by the city, and recognized for their unique bond. Bummer, a Newfoundland, made a living by begging for scraps along Montgomery Street. In 1861, he rescued Lazarus from a fight with a larger dog and thereafter, the two dogs became inseparable. Eventually, newspapers and magazines such as the Californian, Daily Alta California, Daily Morning Call and Daily Evening Bulletin began writing stories of the dogs exploits.When Lazarus was captured by a dog catcher in 1862, a mob of angry citizens demanded his release and petitioned the city to have the pair declared public property. City supervisors were soon forced to release Lazarus, and declared thereafter that the duo would be exempt from city ordinances against stray dogs. In 1863, Lazarus passed away after being struck in the head by a horse. Emperor Norton, who had proclaimed himself the Emperor of the United States, attended Lazarus funeral. Two years later, Bummer passed away, and was eulogized by Mark Twain."We named our gin Bummer and Lazarus in homage to those two dogs and everything they did for San Francisco," says Carter Raff, the founder of Raff Distillerie. His distillery, situated on Treasure Island, was formerly used as a Navy brig (the distillation equipment can be found in the yard, while the prison cells have been converted into a bottling area).Bummer and Lazarus Gin is made from 100 percent California grapes, which are distilled into a brandy. "Were looking to produce a unique gin for the market," says Raff, noting that the use of a grape brandy for the backbone of the gin adds a subtle mouthfeel to its flavor. It is inspired by Dutch-Americana recipe discovered in the early 19th century by drinks historian Dr. David Wondrich. Essentially made from American rye whiskey, this "Holland gin" is distilled in the old Dutch colony of Brooklyn from grains grown in New York State.The gin is produced from NY Distilling Co.s unaged, double-distilled rye whiskey. Citadelle Gin is a Modern Take on an old Genivre.Alexandre Gabriel of Maison Ferrand is the mastermind behind the revival of this genivre. The original recipe for Citadelle Gin was developed by a distillery in Dunkirk in 1771. In 1775, under the authorization of Louis XVI, two Frenchmen, Carpeau and Stival opened a distillery at the Citadelle of Dunkirk. This complex classic recipe is distilled in cognac pot stills at the Ferrand distillery, and barrel aged, in order to create a more traditional Gin reminiscent of those crafted hundreds of years ago. "Barrel aging tends to tame the flower and citrus feel of gin and enhances its rounder and softer notes, explains Gabriel. Barrel aging was customary since the spirit was stored and transported in oak barrels at a time when glass was too fragile while plastic and stainless steel vessels were still not available. London gin is redistilled in a traditional still with juniper berries and botanicals. Only natural flavorings are allowed to be added and a high quality ethyl alcohol used. London gin must contain at least 70 percent alcohol. Citadelle Gin is technically a London gin, with a few different steps. The 19 botanicals are infused for 72 hours, imbuing the Citadelle body with its aromatic notes. For 12 hours, Citadelle is distilled in a copper pot still with a naked flame. Back in February 2011, Ed Tiedge, a former Marine and the master distiller at StilltheOne Distillery, was busy putting the finishing touches on another run of Comb 9 Gin when his phone rang. On the line was a volunteer from the Wounded Warrior Project, asking him to donate some of his gin for an auction to benefit wounded soldiers. Ed agreed without hesitation, before realizing he could do a whole lot better. It was nearly 180 years ago that Jean-Baptiste Combier and his wife Josephine started experimenting in their kitchen in the village of Saumur in the Loire Valley of France. The confectioners wanted to create something new and different, an original flavor. In 1834 they finally perfected the recipe for the very first triple sec Combier Liqueur dOrange which consisted of sun-dried West Indies orange peels, local spices, and some secret ingredients. The recipe and process remain the same to this day, from the bitter Haitian and sweet Valencia oranges, down to the century-old copper stills. Once the orange peels are rehydrated, the rind is separated from the pith by hand in order to tone down the bitterness during distillation. At the time, Dr. Sylvius was a Professor of Medicine in Leyden, and he attempted to infuse juniper berries into a spirit distilled from grain in order to create a panacea. The resulting elixir eventually became known as gin, and was so popular that within a few decades, the Dutch were exporting 10 million gallons annually. For the next 250 years, nearly all the gin produced in the world was barrel-aged since the spirit was stored and transported in oak barrels (at the time, glass was too fragile and plastic and stainless steel containers were still not available).In order to craft a more traditional gin, "weve rested our signature vapor basket gin in our charred oak barrels previously used to age our spiced rum," says Darek Bell, the founder and master distiller at Corsair Artisan Distillery. Nestled in the foothills of the Catskill mountains and located just moments away from the site of the original Woodstock Music Festival, Catskill Distilling Company honors the rich history of the Sullivan County Catskills a unique blend of tradition and revolution. Over three decades ago, Monte Sachs Catskill Distilling Companys founder and master distiller attended veterinary school at the University of Pisa in Italy. After class each day, Sachs would meet with an Italian farmer named Bernardini, who taught Sachs how to distill grappa. "He taught me about the importance of sourcing quality ingredients from small farms and about how the shape and size of a still is reflected in the weight and mouthfeel of the spirits," says Sachs.Catskill Distilling Companys Curious Gin is distilled from locally-grown, whole wheat, which Sachs purchases from a nearby mill. After mashing and fermenting the wheat for approximately five days, Sachs distills the wash through his custom-made, twin 650-liter copper-pot stills imported from Germany. "Some people have said saxophone; some people have said flute; some people have said Willy Wonka," says Sachs, of the stills appearance. "But it is an incredible instrument." The grain-based spirit is infused with a unique recipe of exactly fourteen ingredients, including oranges, cucumbers, Spanish almonds, cassia, cinnamon, coriander, juniper berries and anise. "I searched tirelessly for the perfect combination of regional and exotic botanicals in order to craft the gin," says Sachs.Following distillation, Sachs brings the gin to proof with pure snowmelt water sourced from the Catskill mountains. The mineral-rich water gives the gin an aroma of herbs and spices, along with a touch of citrus zest and pepper. In an age of restless brilliance, Dorothy Parker was a singular sensation. Born in New Jersey, Parker was raised in New York City and rose to acclaim, both for her literary output and as a founding member of the Algonquin Round Table. After a lifetime of work as a critic, satirist and short-story writer, Parker collaborated with Alexander Woollcott to produce an anthology of her work entitled The Portable Dorothy Parker. Parkers is one of only three Portable series that remain continuously in print (the other two being Shakespeare and the Bible)."Ive been a devotee since I was 19 or 20 reading Parker in college and I wanted to pay tribute to her, both for everything shes done for me and for New York," says Allen Katz, co-founder of New York Distilling Co. Together with Tom Potter, founder of Brooklyn Brewery, Katz opened the doors to his 5,000 square-feet distillery in Brooklyn (the distillery straddles the neighborhoods of Williamsburg and Greenpoint one door to the distillery opens up to the Williamsburg zip code and the other to the Greenpoint zip code) just one year ago.Much like Dorothy Parker herself, Dorothy Parker Gin is bold and robust, with a hint of sweetness. "While juniper is the backbone of any gin," explains Katz, "we add a number of classic and contemporary botanicals," including orange peel, lemon peel, coriander, green cardamom, sweet cinnamon, elderberries and dried hibiscus petals. After distilling the wash inside a 1,000 liter, Christian Carl alembic pot still imported from Germany, Katz lets Dorothy Parker Gin rest in stainless steel tanks for a few days. "We like to let it rest after distilling it," Katz says, "in order to let the flavors come together and really harmonize." After resting in the tanks, the gin is brought to proof using double-filtered water before each bottle is filled and labeled by hand. The labels, which are adorned with Pakers profile, were designed by Milton Glaser, creator of the iconic "I LOVE NY" campaign. Dorothy Parker Gin has a nose of juniper and peppercorn, and a bouquet of hibiscus, cinnamon, cardamom and elderberries with a touch of sweetness. It took over 70 years after the prohibition had ended for the distilling industry to return to New York City. New York had a flourishing distilling industry by the early 19th century, however things changed during the Civil War, when President Lincoln taxed spirits to fund the military. The fatal blow for the legal distilling industry in US came in 1920, when the Eighteenth Amendment came into effect making the production of alcohol illegal.
