The story of the iconic Hennessy cognac starts with an Irish officer in the service of King Louis XV of France. Richard Hennessy settled in the French region of Charente in 1765, and soon began trading in cognac. Hennessy started off ambitiously, and by the end of the century the house was exporting its premium spirit to the US. At the beginning of the 19th century, the company started conquering Australia and Southeast Asia, which was followed by South American, Japanese and Chinese markets. In 1860, a quarter of cognac exports bore the Hennessy name. Today, Hennessy sells around 70 million of bottles every year, which is roughly half of all worlds cognac, and over 350,000 casks of eaux-de-vie are kept in its cellars. The long and sophisticated process of making this premium cognac stars with the grapes. Hennessy uses the late-maturing variety Ugni blanc, which provides just the right balance between high acidity and a low alcohol content for creating well-balanced eaux-de-vie (water of life). It takes approximately 12 kg of grapes to obtain one liter of eau-de-vie. Pressing the grapes produces 9 liters of wine, which is first distilled to make 3 liters of brouillis, and for the second time to make one liter of pure eau-de-vie. These eaux-de-vie are then put in French oak barrels and stored in special, carefully monitored cellars. Every day, the Hennessey tasting committee meets to select or reject eaux-de-vie, and the selected barrels are then sampled annually throughout maturation. Situated along the banks of the Charente River in the Cognac region of France, Maison Royer is one of the most prestigious producers of cognac in the world. The House was founded in 1853 by Louis Royer, who was originally a beekeeper, like his father and grandfather before him (the symbol of Maison Royer remains a bee). After acquiring a few casks of cognac and letting them mature in the cellar of his home, Royer began bottling and selling the cognac under his own name, primarily to customers in Scandinavia.Today, Jrome Royer a fifth-generation master distiller and the great-great-great grandson of Louis Royer continues to shepherd his family legacy forward. Over three decades ago, Ansley Coale picked up a hitchhiker along Route 101 just north of San Francisco. The hitchhiker Hubert Germain-Robin was of French origin and came from a family that had been producing cognac since 1782. As the two drove northward in Coales car, Hubert spoke of his familys background in distillation. "Hubert wanted to distill using craft methods handed down for centuries from master to apprentice," recalls Coale, who eventually teamed up with the hitchhiker to found Craft Distillers in 2003. After purchasing an antique cognac still from an abandoned distillery, Hubert and Coale built a redwood shed in northern California and began distilling spirits. Craft Distillers Maison Surrenne range is a collaborative effort between Germain-Robin and Cognacs largest remaining family-owned producer: "Surrennes eight aging cellars hold extensive stocks of aged distillates that have been maintained pure and unblended. There are four distilleries, including the ancient installation in the chateau of Triac. The home distillery is on the Quai de lIle Madame on the banks of the Charente river in Jarnac. Situated along the banks of the Charente River in southwestern France, Domaine du Renclos was founded in 1811 by Pierre Navarre, a French shipping merchant. The 11 hectares Navarre Estate, which is the equivalent of only 0.04 square miles, is situated entirely within the Grande Champagne cru of Cognac, France. Today, Jacky Navarre " a fourth-generation cognac distiller and one of the last remaining purists in the industry " tends to the estate with a simple rule: "Let nature do (most of) the work." The vineyards of the Navarre Estate are generally composed of Ugni Blanc grapes (which are known for their high acidity), along with small plots dedicated to the production of Folle Blanche and Colombard grapes (which Navarre uses for experimentation purposes). Once the grapes reach their peak maturity for distillation purposes, Navarre harvests them by hand " a technique abandoned long ago by most cognac houses. At the end of the 19th century, Samuel Beau purchased a dilapidated vineyard in the Grande Champagne region of Cognac, France. While the vineyard had suffered from a neglectful owner, Beau recognized that the estate enjoyed rich, chalky soils, rolling hills and generous amounts of sunlight, and would be ideal for the distillation and maturation of cognac. After purchasing the estate, Beau began tending to its soil and improving the quality of the grapes that were cultivated on the estate. Upon his death in 1914, Beau passed the vineyard on to his son, Paul. Under Pauls stewardship, the estate was expanded to just over 100 hectares and many of its buildings were modernized, including the distillery. While much of the cognac produced by Maison Beau was sold to larger cognac houses during the 20th century, the Paul Beau label was created specifically for the purpose of bottling the best cognacs distilled and bottled by the Beau family.Paul Beau Hors DAge Cognac is made exclusively from Ugni Blanc grapes (the grapes are highly acidic and lacking in tannins, making them ideal for the production of cognac).
